Merry Christmas, dear followers,
Today, Christmas Day, I want to
show you my Mum's birthday cake (her birthday was celebrated yesterday). This cake is really
easy and tasty. I hope you do it and show it to me.
Necesitamos:
- Fresas
- Grosellas
- 4 huevos medianos
- 1 gaseosa (partes blanca y azul)
We need:
- Strawberries
- Redcurrants
- Blueberries
- 400 ml cream
- 3 tablespoons icing sugar
- 8 g cream stabiliser
- 3 tablespoons of homemade lemon marmalade (or lemon curd)
- 100 g sugar
- 100 g all purpose flour
- 4 eggs
- 1 tablespoon backing soda
- Cortar y degustar
Directions:
- Mix the eggs with the sugar using a food mixer
- Preheat the oven to 160º C or 320º F
- Mix the flour with the backing soda and sieve them into the eggs mixture
- Stir the blend gently with a spatula until smooth (it takes some time)
- Pour the dough into a 25 cm diameter baking pan covered with baking paper and tap it on the counter several times, in order to remove the air from the dough
- Bake at 160º C (320º F) for 15 min
- Take the pan out of the oven and let the cake cool
- Whip the cream for 1 min (you will need a powerful mixer, not a hand blender)
- Mix the icing sugar with the cream stabiliser and sieve the mixture into the 1 min-whipped cream
- Whip it until it is consistently whipped (the stabiliser helps the cream not to curdle and makes it thicker)
- Spread the lemon curd on the cake
- With a sparula, cover the top of the cake with the cream, trying not to remove the air from it
- Strew the berries on the cream, as desired
- Cut and taste
¡Muchas gracias por vuestros comentarios y correcciones!
Besos a todos,
Thank you very much for your comments and corrections!
Lots of love,

P.S.: the cake is based on the Genoese Sponge Cake of De Patito a Cisne

ResponderEliminar¡Muchas gracias, Maribel!
